Inspired by the symbolic richness of red ochre, this cocktail pays tribute to the land and the deep spiritual connection many cultures—particularly First Nations peoples—share with it.

Ingredients:

  • Whisky infused with quandong halves – a native Australian bush food known for its tart, slightly sweet flavour and high vitamin C content
  • Naked Hazelnut Liqueur (Australia)
  • House-made cordial
  • Lemon myrtle rim – a nod to the sandstone carvings found throughout the hotel
  • Garnished with gum leaves – referencing the spotted gum trees used to build the boardwalk
  • Finished with a whole quandong, inviting guests to experience its natural flavour

Tasting Notes:
Red Ochre offers a bright, fruit-forward profile from the infused quandong, balanced by the delicate sweetness of Australian hazelnut liqueur. The lemon myrtle rim adds a fragrant, citrus lift to every sip.
