The Menu
Executive Sous Chef Michele Menegazzi and Head Pastry Chef Kumiko Endo have created a unique five course dining experience that celebrates seasonal ingredients inspired by the sights, sounds and colours of the festival of light that transforms the city at night.
Savour signature dishes including kangaroo tartare with Shinshu miso-cured egg yolk and wattleseed tuile, Glacier Toothfish 51 with Fremantle baby octopus and roasted fennel dressing, and porcini crusted wagyu MB 8+ with pickled shiitake, celeriac purée and truffle jus.
As the light spectacle illuminates the sails of the Sydney Opera House, enjoy a delectable green ant forest dessert featuring gianduja, praline and green ants.
